Flying Apron settling in Summerville this spring

The Avon Emporium is about to become the home of Summerville’s newest restaurant.

Chris and Melissa Velden, owners of The Flying Apron Cookery Ltd.  in Tantallon, are relocating to Summerville to set up shop in the Avon Emporium this spring.

Avon Emporium owner Doris Hagmann retired at the end of February.

Melissa Velden says they have been interested in the building since they first spotted it while visiting a friend in the area.

“There’s great potential with the building,” she said.

Velden says the plan is to continue to operate an inn and eatery out of the building.

“Our focus is locally sourced, sustainable food.”

The atmosphere will be casual and comfortable, much like that of the Avon Emporium.

“We want a location that the whole community can come out and enjoy.”

Velden says they plan to host special dinners and events for holidays, but those details are still being worked out.

The plan is to renovate the restaurant first, inn second and old hardware store space, which they intend to turn into a culinary education space, third.

Velden says “teaching people how to cook for themselves” is a large part of what they do at The Flying Apron, and they’re excited to get started in Summerville.

She expects The Flying Apron to be open for business around Easter.
