Mexican Cheese Dip Recipes

Chili Con Queso

1 27-oz. can chilies

1 lb. Swiss cheese, sliced

10 eggs

3 T. flour

1/2 pt. whipping cream

1 large onion, chopped

Butter

Jar of salsa



Preheat oven to 350 degrees. Place alternate layers of chilies and cheese in a large ungreased casserole dish. Beat eggs in a small bowl and add flour and cream. Pour over layers in casserole dish and bake 1 hour. Sauté onion in butter in a pan. Add salsa and spread over casserole. Bake 15 minutes more.



Heart Smart Mexican Cheese Dip

1 c. plain low-fat yogurt

1/2 c. low-fat cottage cheese

2 T. unsalted margarine

1 garlic clove, minced

2 T. green chilies, chopped

1 t. chili powder

1/8 t. ground black pepper



Combine all ingredients in a small bowl. Cover and refrigerate about 1 hour. Stir well before serving with assorted fresh vegetables.



Mexican Cheese Dip

1 medium onion

Butter

1 T. flour

1 t. garlic, crushed

1 c. whipping cream

1 can tomato paste

10 oz. pepper Jack cheese, grated



Sauté onion in butter in a pan until brown or slightly starting to burn. Stir in flour, garlic, cream and tomato paste. When soft and hot, gradually add cheese until bubbly. Serve with tortilla chips.
