You're planning a family dinner and you're looking for a tasty dish. Try this recipe for Chicken with Mangos.

Chicken with Mangos

1 c. all-purpose flour

1-3/4 c. water

1/2 t. salt

1/4 t. baking powder

3 boneless, skinless chicken breasts, cooked

3 c. vegetable oil

1 piece fresh ginger root, cut into wafer-thin slices

3 T. white vinegar

3 T. dry sherry

4 t. soy sauce

2 t. sugar

2 t. cornstarch

2 t. instant chicken bouillon granules

1 t. sesame oil

8 green onions, cut into 1/2-inch pieces

1 15-oz. can mangos, drained and cut into 1/2-inch strips

Combine flour, 1 c. water, salt and baking powder in a medium-size bowl. Beat with whisk until well blended. Let stand for 15 minutes. Cut chicken into 1/4-inch wide strips. Mix into flour mixture and set aside.

Heat vegetable oil in a wok over high heat until it reaches 375 degrees. Add chicken, one strip at a time. Cook until golden, about 3 to 5 minutes. Leave about 1 T. oil in wok. Reduce heat to medium. Add ginger to oil and stir-fry until light brown.

Combine remaining 3/4 c. water, vinegar, sherry, soy sauce, sugar, cornstarch, bouillon and sesame oil. Add to ginger and cook until mixture boils. Stir in onions, reduce heat and simmer for 3 minutes. Mix chicken and mangoes into soy sauce mixture. Cook and stir for 2 minutes. Serve immediately.
